Fried rice with vegetables

Ingredients for 2 servings:

  • 125 g rice
  • Water
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 carrot(s)
  • 1 bell pepper(s)
  • 1 head of broccoli or 300 g frozen broccoli
  • 5 mushrooms
  • e.g. soy sauce
  • 1 tbsp maple syrup or sugar beet syrup
  • oil
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

First, put the rice on the stovetop and boil it in water as usual. Then pour hot water over the broccoli, let it stand for a moment, and then drain. Now cut the other vegetables into pieces. In a large pan or saucepan, sauté the onions and garlic with a little oil. Then add the carrots and bell peppers and fry them together. After that, add the broccoli and mushrooms and fry them briefly. Finally, add the rice and fry it together. To season, drizzle with a generous amount of soy sauce and a tablespoon of syrup. Then mix well again and fry for a short while. Season to taste with salt and pepper.
