Sunday cherry crumble cake like my grandma used to make

Ingredients for 1 servings:

  • 2 tbsp oil
  • 1 tbsp apple cider vinegar
  • 3 eggs
  • 100 g sugar
  • 150 g flour
  • 3 tsp baking powder
  • 1 packet of vanilla sugar
  • 100 g sugar
  • 150 g flour
  • 100 g butter
  • possibly cinnamon
  • 1 jar cherry(s), approx. 370 g drained weight
  • some butter for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

For the batter, whisk the oil, apple cider vinegar, and eggs until fluffy. Add the sugar and continue whisking. Then, combine the flour with the baking powder and vanilla sugar and add to the batter. Butter a baking pan well and pour the batter into it. Drain the cherries well and spread them over the batter. For the crumble, combine the sugar with the flour and softened butter. If you like, add a pinch of cinnamon. Sprinkle the crumble over the cherries and bake at 160°C (320°F) for about 45 minutes. You won’t taste the vinegar at all. It actually helps make the batter really fluffy.
