Orange cookies according to grandma's original recipe

Ingredients for 1 servings:

  • 100 g sugar
  • 125 g butter
  • 1 egg yolk
  • 1 egg(s)
  • 250 g flour
  • ½ orange(s), untreated, zest
  • 150 g ground almonds
  • 100 g sugar
  • ½ egg white
  • 1 orange(s), untreated, zest and juice
  • 75 g powdered sugar
  • ½ egg white
  • some orange juice
  • Flour for dusting

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes

Knead the dough ingredients until smooth and chill for about 30 minutes. Then divide the dough into 2 equal portions. Preheat the oven to 180°C (top/bottom heat). Mix the filling ingredients together. Roll out one half of the dough on baking paper into a rectangle (approx. 40 x 30 cm) and place on the baking tray. Spread the filling evenly on top. Dust a piece of cling film with a little flour, then roll out the other half of the dough into a rectangle and place on top of the filling. Carefully peel off the film and bake the whole thing for 20 minutes at 180°C. For the glaze, beat 1/2 egg white until stiff, then stir in the icing sugar and orange juice. After baking, spread the glaze evenly over the dough and let cool. Then cut into small rectangles.
