Pasta with rocket and cream cheese and ham

Ingredients for 4 servings:

  • 500 g pasta (macaroni chips), or similar
  • 250 g cocktail tomatoes
  • 200 g cooked ham in slices
  • 250 g cream cheese
  • 4 tbsp natural yogurt
  • 1 handful of arugula
  • 2 tsp clarified butter or oil
  • salt and pepper
  • Water

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cook the macaroni chips in salted water for 9 minutes. Meanwhile, combine the cream cheese, yogurt, and arugula, season with salt and pepper, and then blend or purée until the arugula is broken up and the cream cheese turns a light green color. Do not overblend, as this will make the arugula bitter. Cut the cooked ham into 1 cm squares and fry in clarified butter or oil. Then halve the cherry tomatoes, add them, and season with salt and pepper. Drain the pasta water and stir the pasta into the tomato and ham mixture. Then add the arugula cream and mix. Briefly fry everything again and serve immediately.
