Ingredients for 1 servings:

  • 300 g flour
  • ½ pack of baking powder
  • 4 tbsp cocoa powder
  • 115 g brown sugar
  • 300 g dark chocolate
  • 90 g butter
  • 375 ml buttermilk
  • 2 eggs
  • 2 tbsp chocolate (chocolate chips)
  • Fat, for the shape
  • Powdered sugar, for dusting

Preheat oven to 210°C. Brush a muffin tin with oil or melted butter. Alternatively, you can also line the holes with paper baking cups. Place the flour, baking powder, and cocoa powder in a bowl. Stir in the sugar and chopped dark chocolate and make a well in the center. Whisk the eggs and buttermilk in a bowl, pour into the hole along with the melted butter, and mix with a spoon until a batter just forms. Do not overmix, as the batter should still have lumps. Fill each hole in the muffin tin about three-quarters full with batter, sprinkle a total of 2 tablespoons of chopped dark chocolate or chocolate chips over the batter, press down lightly, and bake for 30 minutes, until a skewer inserted into the center of a muffin comes out clean. Let the muffins cool in the tin for 5 minutes, then remove them and let them cool completely on a wire rack. Dust with powdered sugar before serving.
