Ingredients for 4 servings:

  • 400 g penne, whole grain
  • Water (salt water)
  • 1 tsp rapeseed oil
  • 50 g pine nuts
  • 2 cloves garlic
  • 3 onions
  • 450 g leaf spinach (frozen), thawed
  • 400 g tomato(s) (Pizza tomatoes)
  • 1 tbsp tomato paste
  • 150 g sheep’s cheese
  • rosemary
  • Thyme
  • salt and pepper
  • n. B. Sauce thickener

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the penne in salted water according to the package instructions and drain well, then set aside. Finely dice the garlic and onions. Heat the oil in a pan, sauté the onions, and add the garlic. Drain the spinach well, stir it into the onions along with the tomatoes, and season with thyme, rosemary, salt, and pepper. Thicken with tomato paste and a little thickener. Transfer the penne to a baking dish, cover with the vegetable mixture, crumble the feta cheese on top, and finally sprinkle with the pine nuts. Bake briefly in the oven at 180°C until the pine nuts are golden yellow.
