Baked sheep's cheese

Ingredients for 4 servings:

  • 2 tbsp sunflower seeds
  • 400 g sheep’s cheese
  • 1 bunch of spring onions
  • Salt
  • pepper
  • 4 tbsp oil (olive oil)
  • 250 g berry fruit spread (wild berry)
  • 3 tbsp vinegar (raspberry vinegar)
  • Tabasco
  • 1 tsp sugar
  • 1 sprig(s) basil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Roast the sunflower seeds in a pan without fat. Preheat oven to 225°C (425°F). Cut the feta cheese into four equal pieces and place each slice on a piece of aluminum foil. Wash and trim the spring onions and cut them into equal pieces. Arrange them on top of the feta cheese. Season with salt and pepper and drizzle with olive oil. Sprinkle the sunflower seeds over the top, close the foil, and bake for about 10 minutes. Meanwhile, stir the fruit spread with the raspberry vinegar until smooth. Season to taste with Tabasco, sugar, salt, and pepper. Wash the basil and pick off the leaves. Arrange the feta cheese on plates with the sauce and scatter the basil leaves over the top.
