Baked sheep's cheese (Etorki)

Ingredients for 4 servings:

  • 400 g sheep’s cheese (Etorki)
  • 1 egg(s)
  • 2 tbsp flour
  • 50 ml olive oil
  • 1 lemon(s), untreated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the cheese into approximately 1 cm thick slices and peel off the rind. Crack the egg into a deep plate and whisk with a fork. Sift the flour onto a shallow plate. Preheat the oven to 100°C (Gas Mark 1) and place the dessert plates in the center of the oven to preheat. Heat the olive oil in a medium-sized frying pan. Coat the cheese slices first in the egg, then in the flour. Shake off any loose flour. Add the cheese slices to the hot oil and fry for 1/2 minute on each side until lightly golden. Briefly degrease the cheese on kitchen paper. Wash and dry the lemon, and cut into wedges. Arrange the cheese on the warmed plates and serve immediately with lemon wedges. A tomato salad such as the “Corsican Tomato Salad” or tzatziki is delicious with this dish!
