Ingredients for 2 servings:

  • 200 g tofu, natural
  • 1 jar of pickles
  • 1 onion(s)
  • 500 ml tomato(s), pureed
  • 3 dashes of ketchup
  • salt and pepper
  • oregano

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

First, remove the tofu from the packaging and squeeze out any excess liquid over the sink to remove some of the strong flavor. Using a fork, shred the tofu and fry it in a large pot over high heat until it’s dark and firm instead of soft and wobbly. This takes about 10 minutes. Then add the finely chopped onions to the tofu and fry them too. Dice the gherkins and add them. Deglaze with ketchup and tomato puree and simmer for about 5 minutes. Season to taste with salt, pepper, oregano, and a little ketchup, if desired. Potatoes or mashed potatoes go best with this dish.
