Avocado shrimp wraps

Ingredients for 2 servings:

  • 2 avocados
  • 200 g shrimp(s)
  • 1 tomato(s)
  • 200 g Parmesan
  • 3 wraps
  • 1 spring onion(s)
  • herbs, Italian, frozen
  • salt and pepper
  • 5 tbsp lime juice
  • 15 g butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Peel the avocados and remove the pit. Place 1 1/4 avocado in a bowl, mash with a fork, and add 5 tablespoons of lime juice. Dice the remaining 3/4 avocado and add to the mashed avocado. Grate 200g of Parmesan cheese, dice and drain the tomato, and add both to the bowl. Season the guacamole with salt and pepper. Slice the spring onion into rings. Fry the shrimp with butter in a pan, sprinkle the Italian herbs over the shrimp. Microwave the wraps for 1-2 minutes at 600W. Remove from the oven, spread with the guacamole, and sprinkle with spring onions. Cut each of the coated wraps into 3 strips and garnish with shrimp. Finally, roll up the strips and place them on a plate.
