Ingredients for 4 servings:
- 400g spaghetti
- salt water
- salt and pepper
- 1 bunch of parsley
- 1 bunch of basil
- 2 tbsp lemon juice
- 250 g mascarpone
- 50 g Parmesan, grated
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Cook the spaghetti in salted water according to the package instructions. Chop the parsley and basil. Mix the mascarpone with 1/8 cup of the pasta cooking water until smooth. Add the lemon juice and chopped herbs. Season with salt and pepper. Drain the spaghetti and toss with the sauce. Fold in the Parmesan cheese.
