Apple Peanut Butter Muffins

Ingredients for 1 servings:

  • 280 g flour
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 2 m.-sized apples
  • 120 g sugar
  • 100 g peanut butter
  • 2 eggs
  • 80 g butter, liquid
  • 200 ml buttermilk

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 200°C. Wash, quarter, core, and slice the apples. Combine the flour, baking powder, and baking soda in a bowl. In a second bowl, whisk the eggs, sugar, peanut butter, melted butter, and buttermilk until smooth. Add the flour mixture and apple pieces and stir briefly again. Fill the batter two-thirds full into the baking pans and bake for 20-25 minutes at 190°C (top/bottom heat).
