Baked Apple Muffins

Ingredients for 1 servings:

  • 2 apples
  • some butter
  • 1 tsp sugar, brown
  • some lemon zest, grated or lemon sugar
  • 2 tbsp raisins
  • 250 g flour
  • 3 tsp baking powder
  • ½ tsp baking soda
  • 100 g sugar
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • ½ tsp cinnamon
  • 2 eggs
  • 75 ml oil
  • 1 cup sour cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Makes about 12 nut-free muffins

Peel and core the apples, and cut them into small pieces. Mix them with the lemon zest, brown sugar, and raisins. Melt the butter in a pan and sauté the apples. They shouldn’t be too soft; they still need a bit of bite. Set aside to cool. For the batter, mix the flour with the baking powder and baking soda. In another bowl, mix the sugar with the vanilla sugar, cinnamon, salt, eggs, oil, and sour cream. Add the apples and finally fold in the flour mixture until the dry ingredients are moistened. Line a muffin tin with paper cases and fill with the batter. Bake the muffins in a preheated oven at 160°C (fan oven) for about 30 minutes.
