Ingredients for 4 servings:

  • 2 tbsp sugar
  • 2 pinches of salt
  • 1 pack of puff pastry, rolled out
  • 2 tbsp sugar
  • 1 tsp salt (fleur de sel)
  • Salt (fleur de sel) for sprinkling

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Puff pastry pig ears with salt and sugar

Mix the sugar and salt, sprinkle over the dough, and lightly roll it over with a rolling pin. Fold the dough over twice on each long side toward the center, fold lengthwise, cover with cling film, and chill for about 15 minutes. Mix a second portion of sugar and salt. Cut the dough into approximately 7 mm wide slices, roll them in the sugar mixture, and place them on a baking sheet lined with baking paper. Bake for 10-12 minutes in the center of an oven preheated to 220 degrees Celsius. Turn the Prussiens over after 6 minutes. Remove from the oven, sprinkle with fleur de sel, and let cool on a wire rack. Delicious with wine and cheese!
