Duchess potatoes

Ingredients for 4 servings:

  • 750 g potatoes, floury
  • 100 g butter, soft
  • 4 eggs, including the yolk
  • Salt
  • 2 eggs, including the yolk (for brushing)
  • nutmeg

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Boil the potatoes and press them through a ricer. Stir in the butter and egg yolk, and season with salt and nutmeg. Preheat the oven to 225 degrees Celsius. Fill a piping bag with the mashed potatoes with a large star nozzle and pipe rosettes onto a greased baking sheet. Mix the two egg yolks with a little water and spread them on top. Bake the duchess potatoes for about 10 minutes.
