Lavender Panna Cotta with Blueberries

Ingredients for 2 servings:

  • 3 dl cream
  • 2 tbsp honey
  • 10 lavender flowers
  • 2 sheets of gelatin
  • 1 tbsp honey
  • ½ lemon(s), juice only
  • 150 g blueberries

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Bring the cream, honey, and lavender blossoms to a boil. Remove the pan from the heat and let it steep for 5-10 minutes, then strain/remove the lavender blossoms. Add 2 sheets of soaked and drained gelatin and mix well. Pour into cold, rinsed molds. Let set in the refrigerator for 3-4 hours. Turn out onto a plate. Mix 1 tablespoon of honey and half a lemon, juice only, well and drizzle over the top. Garnish with 150g blueberries.
