Cherry red cabbage with bite

Ingredients for 8 servings:

  • 1 small head of red cabbage, cleaned and cut into thin strips
  • 600 ml red wine, strong
  • 600 ml cherry juice
  • 150 ml apple cider vinegar
  • 1 ½ tsp, heaped salt
  • 2 tsp sugar
  • 2 bay leaves, fresh
  • 1 stalk(s) cinnamon
  • 6 carnations
  • 4 juniper berries
  • 4 allspice berries
  • 2 star anise
  • 200 g cherry(s), pitted, jar or frozen, well drained
  • 150 g goose fat

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Cooking/baking time approx. 30 minutes; Total time approx. 1 day 45 minutes

Mix the red wine, cherry juice, and apple cider vinegar and dissolve the salt and sugar in it. Pour everything over the red cabbage. If necessary, press the red cabbage down until it is completely covered by the liquid. Place the spices in a spice or tea bag and press them into the liquid. Marinate for at least 24 hours – longer is better – stirring the red cabbage occasionally. Then remove the spice bag and drain the red cabbage well in a sieve, reserving the marinade. Heat the goose fat in a large pan and lightly fry the red cabbage over high heat, stirring frequently. Pour in the marinade in portions of about 200-300 ml and reduce, stirring occasionally, until the liquid resembles a thick syrup. Only then add the next portion of marinade. When the marinade is completely used up, add the cherries. Reduce the liquid one last time to a syrup that covers the red cabbage as completely as possible. If necessary, season with salt, sugar and apple cider vinegar.
