Brussels sprouts in curry sauce

Ingredients for 4 servings:

  • 500 g Brussels sprouts
  • Salt and pepper from the mill
  • 30 g butter
  • 2 tsp flour
  • 2 tsp curry powder
  • ¼ liter broth
  • 100 g crème fraîche
  • 2 tsp lemon juice
  • 1 pinch(s) of sugar
  • 1 apple

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Brussels sprouts and apple vegetables

Clean and wash the Brussels sprouts, and cook them in boiling salted water for about 15-20 minutes. Melt the butter in a saucepan, briefly sauté the flour and curry powder, and deglaze with the broth. Add the crème fraîche, bring to a boil, and season the sauce with lemon juice, salt, pepper, and a pinch of sugar. Let it simmer for 5 minutes. Wash and dice the apple, and add it to the sauce along with the drained Brussels sprouts. Serve with pork fillet and boiled potatoes. I found this recipe in a magazine about 15 years ago; it’s been our classic Brussels sprout recipe ever since.
