Masala potatoes with red lentil dal

Ingredients for 4 servings:

  • 1 kg potatoes
  • 2 tbsp garam masala
  • 300 g lentils, red
  • 80 g tomato paste
  • 900 ml water
  • 4 garlic cloves
  • 1 bunch of coriander
  • 4 tbsp olive oil
  • salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Preheat oven to 200°C (top/bottom heat). Wash the potatoes, cut them into large pieces, and place them in a bowl. Press 2 garlic cloves over the potatoes and mix with 1 tablespoon of garam masala, salt, and oil. Spread the potatoes on a baking sheet and bake in the oven for about 30-40 minutes, until crispy. Simmer the lentils in a pot with water, tomato paste, salt, the remaining garam masala, and garlic cloves for 20 minutes. Season with salt and pepper. Rinse the coriander, shake it dry, pick off the leaves, and add them to the potatoes and lentil dal. 531 kcal per serving.
