Ingredients for 2 servings:
- 300 g minced meat, mixed
- 4 peppers, red or yellow, pitted
- 1 cup rice
- 1 clove(s) garlic, finely chopped
- 3 tbsp vegetable broth (Vegeta)
- 1 tbsp paprika powder, sweet or medium hot
- 750 ml juice (vegetable juice)

Here’s a Serbian recipe for stuffed peppers that I’ve adapted for the slow cooker. In a bowl, combine the ground beef with the uncooked rice, 1 tablespoon of Vegeta, the finely chopped garlic clove, and the paprika. Fill the deseeded peppers with this mixture and place them in the bottom of the slow cooker. Mix the vegetable juice with 2 tablespoons of Vegeta and pour over the peppers to coat everything. Cook in the slow cooker on high for 8 hours. If you like, you can thicken the sauce with a roux before serving.
