Ingredients for 4 servings:
- 2 cup(s) mashed potatoes, rest
- 1 liter soup (instant)
- 1 handful of vegetables, steamed or stewed, also frozen
- 3 tbsp sour cream or crème fraîche
- 3 tbsp chopped ham or bacon, leftover smoked pork
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Ideal use of leftovers
Bring the soup to a boil and dissolve the mashed potatoes in it. Leftover floury potatoes can also be mashed and stirred into the soup instead of mashed potatoes. Stir the vegetables into the soup and heat through. Ideally, you should use a colorful vegetable mix (farm vegetables or similar). Any leftover vegetables from the kitchen will do, even if they have already been tossed in butter, etc. Finely dice the leftover ham, bacon, or smoked pork loin and fry them vigorously while the soup is boiling and the (perhaps still hard) vegetables are becoming al dente. Stir in the sour cream, ladle the soup into bowls, and serve sprinkled with the fried bacon. Serve with toasted slices of black bread.
