Creamed zucchini

Ingredients for 2 servings:

  • 500 g zucchini
  • 1 garlic clove(s)
  • e.g. salt and pepper
  • e.g. paprika powder
  • 200 ml cream or soy cuisine
  • 2 tbsp rapeseed oil

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

First, chop the zucchini into small pieces. I prefer slices for visual appeal, but cubes are just as fine. Then fry them in about 2 tablespoons of rapeseed oil. Once the slices have browned, add the finely diced garlic and fry for 2 minutes. Then deglaze with cream/soy cream and reduce the heat. Simmer for 5 minutes. Season to taste. The creamed zucchini tastes wonderful with a nicely roasted beef fillet, but is also delicious with potatoes or pasta.
