Ingredients for 50 servings:

  • 250 g butter
  • 120 g powdered sugar
  • 1 egg(s), including the yolk
  • 100 g almond(s), unpeeled, ground
  • 350 g flour
  • Flour, for shaping and rolling out
  • 1 egg(s), including the yolk, for brushing
  • 50 almonds, whole and peeled

Instructions

Working time approx. 40 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 40 minutes

Cream the butter, sugar, and egg yolk until fluffy. Add the ground almonds and flour. Knead everything into a firm dough. Form into a ball with floured hands, cover, and let rest in the refrigerator for 2 hours. On a floured work surface, form into 2-cm-thick rolls. Cut 2-cm-thick slices from the rolls, shape them into balls, and place them on a greased baking sheet. Flatten slightly with the heel of your hand. Brush the surface with egg yolk and top each with 1 almond. Place the baking sheet on the middle rack of the preheated oven and bake at 180°C for 10-15 minutes until golden brown.
