Ingredients for 1 servings:

  • 750 g flour
  • 500 g butter
  • 200 g cream cheese
  • 4 egg yolks
  • 1 vanilla pod(s)
  • some sugar
  • 300 g hazelnuts, ground
  • 150 g sugar
  • 4 egg whites
  • 8 drops of bitter almond flavor

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 20 minutes; Total time approx. 12 hours 50 minutes

Cookies, croissants for coffee or for Christmas

Knead flour, butter, cream cheese, egg yolk, vanilla, and a little sugar into a dough. Shape into 14-16 balls, and refrigerate for a few hours, preferably overnight. Then knead each ball briefly again and roll out into a thin, round disc with plenty of sugar. Use a cake server to determine the size of each piece. Place a little nut filling (ground hazelnuts, sugar, bitter almond oil, egg white, and a little water, if desired) on top and shape into croissants. Bake at 180 degrees Celsius (top and bottom heat) for about 15-20 minutes. This recipe can easily be halved. These nut crescents are perfect with coffee or for Christmas baking.
