Ingredients for 4 servings:
- 400 g parsley root(s)
- 250 ml milk
- 100 ml crème fraîche
- Salt
- White pepper, freshly ground
- Nutmeg, freshly grated

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel the parsley roots and cook gently in the milk until soft. Puree with a hand blender and stir in the crème fraîche. Season with salt, pepper, and nutmeg. An excellent accompaniment to game and braised dishes.
