Gluten-free magic bread

Ingredients for 1 servings:

  • 300 g buckwheat flour
  • 125 g corn flour
  • 75 g chickpea flour
  • ½ package baking powder
  • 50 g oat flakes, gluten-free
  • 10 tbsp grains
  • 3 tbsp chia seeds
  • 4 tbsp psyllium husks
  • 1 tbsp salt
  • 1 tbsp honey, alternatively agave syrup or sugar beet syrup
  • 1 tbsp apple cider vinegar
  • 700 ml mineral water

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 55 minutes

For the dough, mix all the dry ingredients. Finally, add the honey, vinegar, and mineral water and mix on low speed for the leavening effect. Pour the dough into a loaf pan and let it rise in a warm place for at least half an hour (I put the pan in the oven at 50 degrees Celsius for an hour). Then bake for 60 minutes at 200 degrees Celsius (top/bottom heat). Remove the bread from the pan and bake for another 10 minutes.
