Vegetable boats with melted cheese

Ingredients for 10 servings:

  • 2 tomatoes
  • 1 bell pepper(s)
  • 4 mushrooms (giant mushrooms)
  • 2 garlic cloves
  • 5 tbsp feta cheese or sheep cheese
  • 5 slices of mozzarella
  • ½ tsp oregano
  • 2 tsp basil, chopped
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Halve the tomatoes and bell peppers lengthwise and deseed them. Twist out the stems from the mushrooms. Finely dice the garlic, mushroom stems, feta cheese, and mozzarella. Mix the feta cheese and diced mushrooms with oregano, half the garlic, salt, and pepper. Mix the mozzarella with the basil and the remaining garlic, and season. Fill the prepared vegetables with 1 tablespoon each of the feta cheese and mozzarella mixture. Place the boats on the side of the grill until the cheese has melted.
