Vegetable skewers

Ingredients for 10 servings:

  • 1 clove(s) garlic
  • 100 ml vegetable stock
  • 2 tsp herbs de Provence
  • 2 tbsp balsamic vinegar
  • 2 small zucchini
  • 5 small onions
  • 250 g mushrooms
  • 10 cherry tomatoes

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop the garlic. Bring the vegetable stock to a boil. Add the garlic, Provençal herbs, and vinegar, and let cool. Cut the zucchini into 3 cm wide pieces, halve or quarter the onions, depending on their size. Pierce all the vegetables several times with a fork and marinate in the herb broth for about 30 minutes. Then, mix everything together as desired and place them on skewers and grill them on aluminum trays for about 10 minutes. You can also do this without the skins; you just have to turn the skewers a little more often to prevent them from turning black. Tip: You can also use other vegetables like bell peppers, depending on your taste.
