Fruit base (sponge cake)

Ingredients for 1 servings:

  • 125 g butter or margarine
  • 2 eggs
  • 175 g flour
  • 1 pinch of salt
  • 100 g sugar
  • 1 shot of milk
  • 1 packet of vanilla sugar
  • 1 tsp, leveled baking powder

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Grease a fruit-based tin well. You can also dust it with flour, but I never do that because the base always comes out perfectly. Preheat the oven to conventional heating (approx. 180°C) or fan-assisted (approx. 160°C). Cream the butter or margarine until light and fluffy, then gradually add the sugar, vanilla sugar, and salt. Continue beating. Beat in the eggs, one at a time, for 1/2 minute, until a nice, creamy mixture forms. Mix the flour with the baking powder and add it alternately with the milk. Spread the batter into the fruit-based tin and place it in the bottom of the oven. Bake for about 20 minutes. After baking, immediately turn the cake out of the tin and let it cool. Now you have so many options. You can either simply top it with fruit, or spread custard underneath, and so on… there are no limits to your creativity.
