Roros nut slices with orange glaze

Ingredients for 1 servings:

  • 500 g flour
  • 100 g sugar
  • 250 g butter, (250 – 300 g)
  • 2 eggs
  • 250 g hazelnuts, ground
  • 150 g sugar
  • 2 lemon(s), grated peel – or equivalent Citroback
  • 1 orange(s), the juice
  • 150 g powdered sugar
  • 1 orange(s), the juice

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Make a shortcrust pastry from flour, sugar, butter, and eggs. Chill the pastry in the refrigerator for 1 hour. For the filling: Mix the ground nuts with the sugar, lemon zest, and the juice of 1 orange. Roll out 2/3 of the pastry and spread the filling on top. Roll out the remaining pastry (as a “blanket”) and place it over the filling. Bake the pastry at 190°C (375°F) in a preheated oven for about 25 minutes. Meanwhile, mix the powdered sugar with the juice of the second orange until smooth. Spread the glaze over the pastry and cut the pastry into approximately 3 cm cubes while still warm. Store the pastry in tightly sealed containers in a cool, dry place.
