Beef liver with bananas and sherry

Ingredients for 4 servings:

  • 500 beef liver
  • 2 small onions
  • 2 large bananas
  • 8 tbsp sherry, white, dry
  • 6 tbsp white wine
  • 2 tbsp, leveled flour
  • 1 tbsp tomato paste from the tube
  • 1 dl water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Cut the liver into small pieces. Chop the onion finely. Heat a frying pan with butter, lightly sauté the onions, then add the liver to the pan and sprinkle with flour. Season with salt and a little pepper. After everything has been briefly fried, add the white wine, tomato paste, and water; mix well, reduce the heat, and simmer briefly. Slice the banana into rings, add the sherry and banana, and adjust the seasoning if desired. Serve with rice or potatoes.
