Cashew rice

Ingredients for 4 servings:

  • 2 m.-sized onion(s)
  • 2 spring onions
  • 30 g butter
  • 300 g rice (long grain)
  • 700 ml water
  • ½ tsp salt
  • 100 g cashew nuts, salted and roasted
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Peel and finely dice the onions. Trim the spring onions and slice them into thin rings. Roughly chop the cashews. Heat the butter in a pan and sauté the diced onions and onion rings. Add the rice and sauté for half a minute. Pour in the water, add the salt, and cook over high heat for one minute. Then, cover and let stand over medium heat for 20 minutes. Finally, season with salt and pepper, stir in the cashews, and serve.
