something sweet for every season

Make a shortcrust pastry from butter, sugar, flour, flavoring, and egg. Wrap it in cling film and let it rest in the refrigerator for 1 hour. Preheat the oven to 175°C. Roll out the dough into an oblong rectangle, either on a floured surface or between sheets of cling film, and spread with the jam. Roll out the marzipan between sheets of cling film to half its size and place it on half of the pastry. Fold the other half over and press down lightly. Cut the filled pastry sheet into small squares (approx. 3 x 3 cm). Rinse the knife repeatedly under clean water. Place the pastry squares on a baking sheet lined with baking paper and bake for approx. 13-14 minutes.
