Cauliflower in a date and cashew sauce

Ingredients for 2 servings:

  • 1 m.-large cauliflower
  • ½ handful of cashew nuts
  • 1 handful of dates
  • 2 tbsp oil
  • 1 tsp honey
  • 200 ml natural yogurt
  • 2 pinches of nutmeg
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Wash the cauliflower, pick it apart, and cook it in salted water until tender, then drain well in a sieve. In the meantime, chop the cashews and dates. It tastes best when the pieces are of varying sizes, so chop one half roughly and the other finely. Heat the oil in a pan and add the cashews and dates, toast briefly, add the honey, and toast again. Deglaze with the yogurt and season with spices to taste. Now add the cauliflower, mix everything well, and heat through again. You can serve the cauliflower as a main course or as a side dish, for example, with poultry or sweet potatoes.
