Ingredients for 4 servings:

  • 200 ml kefir (fermented for 2 days)
  • 2 tbsp fresh herbs, chopped (chives, parsley)
  • 1 small onion(s)
  • 1 bell pepper(s), red
  • 1 tomato(s)
  • Salt
  • olive oil
  • possibly cayenne pepper
  • possibly garlic clove(s), approx. 1/2 (finely grated)

Working time approx. 15 minutes; Total time approx. 15 minutes

with homemade milk kefir

If you have a milk kefir culture, let the milk ferment for two days. This also works with store-bought kefir, but you’ll want to use less, as it’s more liquid. Mix the kefir with the finely chopped herbs. Finely chop the bell pepper, tomato, and onion, or blend them for an even finer consistency. Add to the kefir and season with salt, olive oil, and possibly cayenne pepper/garlic. It also tastes great as a dip for savory dishes, strips of vegetables, or fresh bread.
