Ingredients for 3 servings:

  • some clarified butter
  • 50 g smoked belly, diced
  • 50 g onion(s), finely diced
  • 50 g leek, cut into fine strips
  • some garlic, finely chopped
  • 1 pinch of salt
  • 1 pinch(s) white pepper, finely ground
  • n. B. Chili flakes, mild

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Turns a boring mash into a real burner

If using, remove the rind from the bacon and finely dice the bacon. Finely dice the onions. Trim, wash, and finely slice the leeks. Fry the diced bacon in a pan over medium heat (or half heat). Once the bacon has taken on some color, add the onions, garlic, and clarified butter. Once the onions are sautéed, add the leeks. After 3-4 minutes, toss the contents of the pan several times. Season to taste with salt, pepper, and chili, and serve as a topping on the potato and carrot mash.
