Zucchini puree

Spread the love

Ingredients for 4 servings:

  • 4 zucchini, green
  • 1 onion(s)
  • 1 tbsp processed cheese with herbs
  • e.g. potato(s), boiled or
  • Mashed potato powder for thickening
  • salt and pepper
  • nutmeg
  • some oil or Culinesse

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the zucchini and chop very finely. Sauté it with the finely diced onion in a little oil or Culinesse in a large pot. Sauté all the vegetables until soft (takes about 10 minutes with the lid closed) and then mash with a potato masher. Now add the cream cheese and seasonings. Finally, mash the potatoes or thicken with mashed potato powder (I prefer this method) until the desired consistency is reached. The mash is always nice and chunky, and we eat it with dishes like schnitzel, meatballs, chicken pickles, and, most of all, with fish. It really goes with (almost) everything.
