Ingredients for 2 servings:
- 500 g asparagus, green
- 1 tbsp olive oil, or clarified butter
- 3 tbsp pine nuts
- Cheese (Pecorino, Parmesan, Prosecco cheese or truffle pecorino)
- Salt (orange)
- pepper
- nutmeg
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes
First, roast the pine nuts in a pan without fat until golden brown. Peel the asparagus. Heat oil or clarified butter in a pan, add the asparagus, and fry over high heat until golden brown. This only takes 3-5 minutes, depending on how crisp you like the asparagus. Season with salt, pepper, and a little freshly grated nutmeg. Grate cheese over the top and serve sprinkled with pine nuts. It’s also a great side dish for pan-fried meat.
