Ingredients for 4 servings:
- 700 g asparagus, green
- 1 tbsp butter
- 1 tbsp olive oil
- 300 g bacon, diced
- 3 clove(s) garlic, chopped
- 2 eggs
- 2 egg yolks
- 7 tbsp Parmesan, grated
- Salt
- Pepper, white, ad mill
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Clean and blanch the asparagus, rinse, pat dry, and cut into 2cm pieces. Fry the bacon in olive oil and butter, add the garlic and asparagus, and cook for 3 minutes. Mix the remaining ingredients, add to the bacon/asparagus, stir, and cook for another 2-3 minutes.
