Ingredients for 4 servings:
- 500 g asparagus, white
- 50 g flour
- 2 eggs
- 100 g breadcrumbs
- 50 g clarified butter
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Peel the asparagus and blanch briefly. Coat in flour, egg, and then coarse breadcrumbs. Fry in clarified butter. Serve with gravlax or salad for an interesting starter during asparagus season.
