Italian sausages with white beans

Ingredients for 4 servings:

  • 1 bell pepper(s), green
  • 8 Cabanossi
  • 1 tbsp olive oil
  • 1 large onion(s)
  • 2 garlic cloves
  • 225 g fresh tomatoes, peeled and diced OR:
  • 400 g tomatoes from the can, diced
  • 2 tbsp red pesto
  • 400 g white beans (canned)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Remove the seeds and strings from the peppers and cut into long strips. Heat the oil in a large pan. Sauté the onion, garlic, and peppers for 5 minutes, stirring occasionally, until al dente. Add the tomatoes and simmer for 5 minutes, stirring occasionally. Pierce the sausages all over with a fork, slice, and toast on all sides in a non-stick pan, then keep warm. Stir in the drained beans and pesto and cook in the sauce for 4-5 minutes. If the sauce is too thick, add 4-5 tablespoons of water. Add the sausages and heat briefly again. Serve with baguette, rice, or mashed potatoes.
