Rice pan with bacon and vegetables

Ingredients for 5 servings:

  • 1 large onion(s), chopped
  • 3 bell peppers, colored
  • 400 g tomatoes, peeled and chopped
  • 2 garlic cloves
  • 400 ml rice
  • 800 ml water
  • 1 stock cube
  • 1 bunch parsley, chopped
  • 300 g bacon cubes
  • 1 tbsp tomato paste
  • 1 tbsp paprika powder
  • salt and pepper
  • olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Dice the bell peppers. Sauté the onion in oil, add the bell peppers and tomatoes, and crush the garlic cloves. Add 800 ml of water and mix everything together. Add the paprika, tomato paste, salt, and pepper, as well as the crumbled stock cube. Finally, stir in the rice. Cover, bring to a boil, and simmer gently. When the rice is almost done, add the parsley and bacon, and let it simmer for about 5 minutes.
