Brussels sprouts in walnut butter

Ingredients for 2 servings:

  • 20 Brussels sprouts
  • 10 walnuts
  • 30 g butter
  • Salt and pepper, freshly ground
  • some allspice, freshly ground
  • some nutmeg, freshly grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Clean the Brussels sprouts, halve the florets, and steam them in a steamer basket over boiling water for 6 minutes. We like them with a bit of a bite; if you prefer them softer or have very large florets, add another 2 minutes. Immediately rinse with cold water to prevent further cooking and to retain their beautiful green color. Melt the butter in a small saucepan over medium heat and lightly toast the coarsely chopped walnuts for 30 seconds. Add the Brussels sprouts and toast briefly, turning occasionally; they should be piping hot. Season to taste with salt, pepper, allspice, and nutmeg, and serve immediately.
