Ingredients for 4 servings:

  • 2 cups of yogurt, 150 g each
  • 4 tbsp flour
  • 2 tbsp maple syrup
  • 2 eggs
  • ½ tsp baking powder
  • 1 pinch of salt
  • 1 large apple
  • 160 g blueberries, frozen or mixed berries
  • powdered sugar
  • Butter, for the molds

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

in the mini cocotte

Beat the yogurt, eggs, and maple syrup with a mixer until light and fluffy. Stir in the flour, baking powder, and salt. Grease 4 mini cocottes with butter. Peel and core the apple, and cut into 4 slices. Place one slice in each mini cocotte. Arrange the berries on top. Pour the batter over the apple. Bake at 175°C (convection oven) for about 25 minutes. Sprinkle with powdered sugar and serve while still warm.
