Ingredients for 4 servings:
- 250 g cream cheese
- 25 g butter (room temperature)
- 30 g sugar
- 1 packet of vanilla sugar
- 1 egg(s)
- 75 g flour
- 1 pinch of salt
- 3 tbsp raisins soaked in rum
- Oil for frying
- Ice cream, melt-in-the-mouth vanilla ice cream
- Sauce (raspberry fruit sauce)
- some peppermint leaves

A dessert that’s easy to prepare and ready in no time. Here’s how to make it: Mix room-temperature butter, sugar, and vanilla sugar with a fork. Then add the egg, cream cheese, flour, a pinch of salt, and rum-infused raisins and stir until smooth. Let stand in a cool place for 20 minutes. You can extend the time up to 120 minutes if desired. Heat clarified butter or oil in a pan over medium heat. Form “pancakes” with a spoon and place them in the heated fat. Fry for about 3 minutes on each side. Serve immediately with the ice cream and raspberry fruit sauce. If you have peppermint leaves on hand, they really enhance the look. If you have leftover blinis, no problem; they’re still delicious eaten cold. P.S.: If children are the main customers of this delicious dessert, we recommend soaking the raisins in apple or orange juice.
