Vegetable pan with Cabanossi

Ingredients for 2 servings:

  • 1 large onion(s)
  • 1 Cabanossi, 150 g
  • 1 large bell pepper(s), red
  • 1 m.-large zucchini
  • 3 m.-sized potatoes
  • 1 pack of tomatoes, chunky, from the Tetra Pak, spicy seasoned
  • black pepper
  • 1 tsp vegetable broth

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Dice the potatoes and cook until tender. Dice the onion, slice the Cabanossi, and fry in oil in a pan. Add the finely diced bell pepper and the half-sliced ​​zucchini and sauté briefly with the lid on. Add the chopped tomatoes. Fill the Tetra Pak about 1/3 full with water and add 1 teaspoon of stock. Season with pepper and simmer uncovered for a good five minutes. Stir in the potato cubes and enjoy.
