Buttermilk mousse with currants

Ingredients for 4 servings:

  • 500 ml buttermilk
  • 7 tbsp sugar
  • 2 tbsp lemon juice
  • 300 g currants, black
  • 6 sheets of gelatin
  • 200 ml cream

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Soak the gelatin leaves in cold water. Mix the buttermilk, sugar, and lemon juice. Wash the currants and drain well. Reserve a few berries for garnish. Squeeze out the gelatin and dissolve according to the package instructions. Stir in a few tablespoons of buttermilk, then stir the gelatin into the remaining buttermilk and chill for 15 to 20 minutes. Whip the cream until stiff. When the mixture begins to set, fold in the cream and berries. Pour into a bowl or glasses and chill. Garnish with the reserved berries before serving.
