Stuffed baked apples with gingerbread

Ingredients for 4 servings:

  • 4 apples, e.g. Boskoop (sour variety)
  • 100 g gingerbread (without chocolate and wafers)
  • 1 orange(s), grated peel
  • 4 tbsp raisins
  • 2 dl cream
  • 2 dl milk
  • 3 tbsp sugar
  • 2 tsp vanilla sugar

quick but sophisticated dessert

Dice the gingerbread into small cubes, mix with 8 tablespoons of cream, the grated orange zest, and the raisins. Halve the apples, remove the cores, and place them in a greased dish with the hollow side up. Fill the apples with the filling. For the glaze, mix the cream, milk, sugar, and vanilla sugar and pour over the apples. Bake in the lower half of the oven at 180°C for 30-40 minutes. Baste with the sauce occasionally. Tips: You can replace the raisins with nuts, or add chopped walnuts or another type of walnut. Instead of vanilla sugar, you can use the pulp of a real vanilla pod, but then add 4 tablespoons of sugar to the glaze.
