Ingredients for 4 servings:
- ½ head of Chinese cabbage
- 2 oranges
- 2 tangerines
- 1 apple (e.g. Pink Lady)
- 1 banana(s)
- 1 handful of walnuts
- 100 ml orange juice
- 1 tbsp lemon juice
- ½ tsp curry powder
- e.g. sugar or honey or elderflower syrup
- 2 tbsp rapeseed oil
- 2 tbsp apple cider vinegar
- possibly rum

Chinese cabbage with fruit and curry dressing
Clean the Chinese cabbage and cut into strips. Peel the banana, halve it, and cut it into thick slices. Peel the tangerines and oranges, separate them into wedges, and cut them into equal-sized pieces. Peel, quarter, core, and cut the apple into bite-sized pieces. Place everything in a bowl. For the dressing, mix together the orange juice, lemon juice, and curry powder and sweeten to taste with sugar, honey, or elderflower syrup. If desired, add a dash of rum. Pour the dressing over the salad, add the vinegar and oil, and mix. Break the walnuts into smaller pieces and sprinkle them on top. Tip: You can also complement this salad with canned pineapple chunks (use the juice instead of orange juice for the dressing) or grapes.
