Ingredients for 1 servings:
- 280 g wheat flour
- 70 g sugar
- 100 g almonds, peeled and ground
- 210 g butter, soft
- 2 tsp vanilla sugar
- 2 tbsp powdered sugar
- Grease for the tray
Instructions
Working time approx. 1 hour 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 3 hours 45 minutes
Makes approx. 50 pieces.
Mix the flour, sugar, and ground almonds in a bowl. Add the butter flakes. Knead all ingredients thoroughly using a dough hook, hand mixer, or food processor. Then knead with your hands on a work surface until you have a smooth dough. Wrap the dough in aluminum foil and let it rest in the refrigerator for two hours. Grease a baking sheet or line it with baking paper. In the meantime, preheat the oven to 180°C. Take walnut-sized pieces of dough. Roll them between your palms and then into small croissants. Place them on the baking sheet and bake for 15 to 20 minutes. While still warm, roll the croissants in a mixture of powdered sugar and vanilla sugar. Let them cool completely on a wire rack. Store in an airtight container. The shelf life is approximately 8 weeks.
